Roasted Root Medley

  • 1lb of beets, onions, carrots 
  • 1 tbs of dried herbs (thyme or rosemary)
  • 2 tbs of olive oil
  • salt and pepper to taste

Toss all the ingredients together so the roots are coated in the oil and herbs.  Bake at 400 degrees in a covered roasting pan for about 30 minutes or until fork tender.
