Sautéed Fingerling Sweet Potatoes

  • 1lb.  fingerling sweet potatoes
  • 2 tbs. olive oil
  • 1/2 stick butter

 Wash potatoes well, but do NOT peel them.  Slice them in 1/4 in slices.  Drizzle with olive oil, sea salt and toss them until coated.

Pre-heat oven to 375 and roast uncovered for about 30 minutes or until fork tender (stir every few minutes to prevent sticking).  At last minute, drop a half stick of butter in the pan and let it melt on the potatoes.
